Breakfast casserole - presenting this absolutely delicious and crazy easy breakfast/ brunch recipe that perfectly utilizes leftovers and covers all food groups.I was wondering why I never tried this before and #backyardbreakfast21 came as perfect opportunity.Thanks Zarmina @kitty.kitchenette

Ingredients:
6 eggs
1 cup milk
Seasoning (salt pepper crushed red pepper mixed Italian spices)
4-6 bread of choice torn or cut into cubes
3 cloves garlic
1/3 cup onion chopped
2 tablespoon butter
1/2 cup mushrooms quartered
1/2 cup capsicum chopped
handful of sliced olives
handful of chopped spinach
cooked hunter beef, chicken or mince
1 cup cheese of choice (mozzarella, cheddar)
Feta cheese crumbled and Cilantro/Green Corriander to sprinkle
olive oil to grease the dish
Recipe:
1. Whisk eggs and milk together
2. Add in seasonings
3. Pour this mixture over bread and let it soak while you prepare filling
4. Melt butter in a pan, add garlic, sautee and then add chopped onion
5. Add mushrooms, spinach, capsicum and olives
6. Add meat7. Grease a casserole dish and layer with half of the soaked bread then filling mixture and then bread again.8. Top with cheese and cilantro9.
