Go bananas with this healthy banana bread!

The more I am venturing into healthy baking, the more I am loving it. Its not that treats like this divine chocolate tart are a no-no but I am all for moderation. Day to day snacks for kids should be relatively healthier and homemade while weekends and special occasions can be indulgent. One of the last weekends, my kids were up early (as usual), done with their breakfast and were hungry by 12. I hadn’t even thought of lunch till then. So I had to engage them and also give them something to eat. We utilized two over ripe bananas and made this super simple healthy banana bread without any refined flour or sugar and it doesn’t even require an electric beater. The kids had so much fun whisking and  mixing ingredients (and making mess).healthy banana bread

A little point to note, Cakes are quick breads contrary to traditional breads that take considerable amount of time for the yeast to act. Quick breads on the other hand has leavening agents like baking powder and baking soda which acts faster. So this quick banana bread is made without sugar and only sweetened naturally with honey/maple syrup and bananas. It also has whole wheat flour, yes that’s right no white flour. Ingredients
  1. 1/3 cup coconut oil (melted)
  2. 1/4 cup honey
  3. 1/4 cup maple syrup*
  4. 2 eggs
  5. 2 large bananas
  6. 1/4 cup almond milk**
  7. 1 teaspoon baking soda
  8. 1 teaspoon vanilla
  9. 1/2 teaspoon salt
  10. 1/2 teaspoon cinnamon powder
  11. 1 3/4 cup whole wheat flour
Instructions
  1. Preheat oven at 325 F.
  2. Grease 9x4 inches loaf pan.
  3. Whisk together honey and oil in a large bowl.
  4. Add in eggs and continue whisking.
  5. Mash bananas in a separate bowl.
  6. Add bananas and milk to the egg mixture. Whisk.
  7. Add baking soda, salt, vanilla and cinnamon. Whisk.
  8. Using a spatula, fold in the flour. Mix until just combined without over mixing it. Few lumps are ok.
  9. Pour the batter in prepared pan.
  10. Bake it for 35-40 minutes.
  11. Cool for 10 minutes before taking out and slicing.
Notes
  1. *you can use 1/2 cup honey only or 1/2 cup maple syrup only.
  2. **This makes it dairy free as well but you can use any type of milk.
