Today I’m sharing the recipe for Braided Chicken Bread, which is an ideal snack for brunch or evening tea. The bread is made from scratch using yeast, filled with a creamy, luscious chicken filling and then baked. This recipe is a staple at my house whether I am hosting, for Ramadan and for kids lunch boxes.

Dough
Dry ingredients- all-purpose flour, instant yeast (check for expiry), powdered milk, salt, sugar
Wet ingredients- oil, eggs, warm water

Butter – you can also use oil

Chicken– cooked (either use rotesserie chicken or boil with little vinegar, soya sauce and ginger garlic paste), shredded
Condiments– black pepper, salt, crushed red chilies

Step by Step Process
Dough
- Combine all the dry ingredients.
- Add oil, egg and water (gradually) to form a medium soft dough.
- Let it rise until double in size.
- Roll out the dough and spread filling in the middle.
- Wrap like a braid and bake.
Filling
- In butter, sauté chopped onions and add flour.
- Add milk to form a thick paste.
- Add seasonings and chicken.

The filling for this chicken bread is quite versatile. For variation, you can add cheese or any vegetables of your choice.
This filling can also be used in chicken pattice or even in sandwiches.

Storage and Make Ahead
You can prepare the chicken filling and make the dough in advance. Store the components separately in airtight containers in the refrigerator until you are ready to assemble and bake the bread.

Easy Chicken Bread
A creamy, chicken stuffed bread recipe, perfect for brunch or any meal of the day.
Ingredients
For the dough
- 4 cups flour
- 1 tablespoon instant yeast
- 2 tablespoon powdered milk
- 1 teaspoon salt
- 4 tablespoon oil
- 2 eggs
- 1 teaspoon sugar
- 1 1/4 cup Water
For the filling
- 2 tablespoon butter
- 2 tablespoon flour
- 1 cup milk
- 1 ½ cup cooked shredded chicken
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon crushed red chilies
- 1 medium onion
- Mushrooms, capsicums- chopped (optional)
Instructions
For the dough
- Mix all the dry ingredients in a large bowl.
- Add oil & 1 egg and start adding water to form a medium soft dough.*
- Place in a lightly oiled bowl and cover and leave it in a warm place for 45 minutes till double in size.
- Knock down the air and divide the dough into two parts.
- Roll out one part on a lightly floured surface around 12x4 inches.
- Spread filling in the middle.
- Cut diagonal strips and start wrapping like a braid. Repeat for the other part. **
- Place them on a baking sheet and brush with beaten egg and sprinkle sesame seeds.
- Bake in a pre-heated oven at 400 F till golden brown for about 25 minutes.
For the filling
- Heat butter in a saucepan and add chopped onions.
- Sauté and add flour.
- Add milk while stirring it continuously to form a thick paste.
- Add seasonings and chicken. Let it cool.
- You can optionally add mushroom and capsicums or any other veggies of choice.
Notes
* you can reserve ½ cup of flour to add in last if the dough gets too sticky by water.
The key to good bread is to knead a smooth, medium soft dough. If you are using a machine, then mix it for good 8 minutes using dough hooks. If using hands, then knead it well on a lightly oiled surface for 12 minutes.
