I am sharing Nan Khatai recipe, which is a traditional Pakistani cookie made with just 3 main ingredients and requires no kneading or beating. What more, it can even be made eggless and is the perfect teatime snack in Pakistan.
I have also shared a variant of this recipe on the blog, which uses ghee/ clarified butter instead of oil and is equally delicious.
Recipe at a Glance
Oil- Any light flavored oil e.g. canola
Flour– All purpose flour/maida
Sugar – Grinded sugar – regular sugar grinded at home
Cardamom– powdered, if making at home grind with pods and then sift
Topping- Egg yolk beaten (for brushing) & grounded pistachios (for sprinkling)
Step by Step Process
- Place sifted flour, sugar and cardamom powder in a bowl and start adding enough oil to bind the dough until a ball can be formed.
- Make small 8 balls and place on greased baking tray pressing them slightly.
- Brush with egg yolk and sprinkle with pistachios.
- Bake for 15-20 mins at 325 F until bottoms are golden, tops are golden and have cracked.

Substitutions & Variations
If aiming for eggless, brush the top with whole milk or buttermilk instead of eggs.
You can use almonds on top and even some roasted chopped almonds in the dough.
Storage and Make Ahead
The best way to store Nan Khatai is in an airtight container once cooled down completely.
You can make the dough and keep it in a cool place covered for upto a day. When needed make the balls and bake.

Ingredients
- 1 cup Flour
- 1/4 cup Castor/Grinded Sugar
- 1/2 cup approx. Light flavored Oil*
- 4-5 Ground cardamom** or 1 teaspoon cardamom powder
- Egg yolk*** beaten, for brushing
- Grounded pistachios/almonds for sprinkling
Instructions
- Place sifted flour, sugar and cardamom in a bowl.
- Start adding oil and binding it with your hands.
- When everything is combined and a ball can be formed, don't add more oil, if left.
- Make small balls [about 8 with this quantity] and place it on greased baking tray pressing them slightly.
- Brush with egg yolk and sprinkle with pistachios.
- Bake in a pre-heated oven for 15-20 mins at 325 F until bottoms are golden, tops have cracked and are nice & golden.

* e.g. canola oil
** you can use commercially available cardamom powder or make your own by grinding the whole green cardamoms and sifting
*** you can use milk or buttermilk instead

Bake in a pre-heated oven for 15-20 mins at gas mark 5 until golden from bottom and tops have cracked and are nice and golden.

pre-heating is done on same temp. as the baking temp.
