These jam cookies sandwiches are made from basic Vanilla cookies. They are a popular teatime snacks and quite versatile too. I am sharing a quick and easy recipe for these cookies with the option of sandwiching with jam of your choice.
This is such a nostalgic childhood recipe. Every kid growing up in 80s and 90s had these sandwich cookies in one form or the other.
Recipe at a Glance

- Cream butter, add sugar and beat well.

- Spread jam on one cookie and sandwich with another one.

Storage and Make Ahead
You can store these cookies in an airtight container at room temperature for up to a week.
To store for an extended period, you can freeze cookies after cooling them completely (and before sandwiching with jam) in an airtight container or resealable freezer bag.
Let them thaw at room temperature before serving.
However my preferred method is freezing unbaked cookies to avoid the slight sogginess due to condensation.
Jam Cookie Sandwiches
Easy Vanilla Sandwich Cookies recipe using simple ingredients!
Ingredients
- 1 cup Soft Butter
- 1 cup Grinded Sugar
- 1 egg
- few drops Vanilla Essence
- 3 cups All-purpose Flour
- Apricot Jam or any other flavor (optional)
Instructions
- Cream butter.
- Add sugar, beat well.
- Add egg and vanilla, beat well.
- Add in flour and mix until combined.
- Take out the dough on parchment/ wax paper and cover with another one.
- Roll out around 1/8 inch thick evenly.
- Refrigerate until firm.
- Pre heat oven to 350 F.
- Cut out cookies with shape of your choice using cookie cutter.*
- Refrigerate if softened, to avoid spreading.
- Bake for 15-18 minutes, rotating half way through.
- Once completely cooled, spread jam of your choice on one cookie and sandwich with another cookie.
Notes
Use variety of shapes and some with holes (like doughnut cutter) to have the jam peek through.
You can re-roll the remaining dough but avoid too much kneading as it will develop the gluten and make the cookies tough rather than crisp and flaky.
