Storage and Make Ahead
You can prepare the pancake batter and store in a covered container in the refrigerator for up to 1-2 days.
Before using the refrigerated batter, give it a quick stir to recombine any separated ingredients.
Alternatively, you can keep the dry ingredients mix in an airtight container and simple whisk in wet ingredients when needed.
I also freeze the fully cooked pancakes to give in lunch box and by the lunch time, they thaw well.

Easy, fluffy pancake recipe from scratch for a perfect breakfast, served with toppings of your choice!
Ingredients
- 1 egg
- 1 cup milk
- 2 tbsp butter- melted
- 2 tbsp sugar
- 1 cup flour
- 1 ½ tsp baking powder
- ¼ tsp salt
Instructions
- In a bowl, mix egg, milk, melted butter and sugar well with a whisk.
- Add flour, baking powder & salt and mix until just combined.
- Do not overmix; few lumps in the batter are fine. *
- Heat a non-stick pan and brush it with melted butter.
- Pour 1/4 cup of batter and cook over medium heat for 2 mins.
- Once bubbles appear on top, flip them and cook for another minute or so.
- Serve immediately with your choice of topping.
Notes
* Check the consistency and add a few tablespoons of milk, if required.
